Happy Hour at Air Conditioned Lounge, San Diego, CA
We heard rumors of the AC Lounge's 1/2 price everything weekday happy hours from 4pm to 8pm. We've also heard about their off-menu to-die-for margarita, Joe's BurritoRita. We head over to take advantage.
The bartender is called Burrito Joe -- after a cartoon character he used to draw in college -- and he takes his margarita-making seriously. No sweet and sour in sight. Just limes, sugar, salt, a fine reposado, and a lot of elbow grease to bring it together. At 5 bucks, it's seriously the best not-at-home happy hour margarita we've had in San Diego in a long time. I'm thinking of the killer organic lime juice + Grand Marnier + Sauza that are part of Chase Jarvis backstage rider. That was the closest (and easiest) thing I'd had since our Mex trip. Thanks, Chase.

First off, no truly good Marg should be made with a mixto tequila (ie Sauza or Cuervo). These are rarely 100% Agave and more significantly have colouring and flavours added. Blech.
Any great Marg has to start with good Tequila. Personally I prefer to use either a Blanco that has a lot of Agave flavour coming through (eg. Casa Noble, Voodoo Tiki) or a Reposado which will add some complexity to the flavour - But it shouldn't be so noticeable as to affect the taste of the marg. Good ones are 4 Copas, Voodoo Tiki, Los Arango, Corralejo).
Then comes the citrus. For a single hand shaken Marg I use the fresh squeezed juice of 2 limes and one Meyer's Lemon (this is a slightly sweet lemon). Add that juice to a shaker half filled with ice. Put in 1.5oz of good tequila, 0.25oz of triple sec (GM has too much orange flavour). The next is key... so much real citrus is sour, so you need to add a bit of sweet. Far better than simple syrup in a marg is to use Agave nectar. made from the same plants that tequila comes from it's very complimentary. Add about 1-2 teaspoons to the shaker. Shake well and strain into a marg glass - either with or without rocks.
