Terrific Twos
My baby just turned two—so technically, she’s not a baby anymore. Her birthday, of course, called for a celebration, and because she’s too young to have many friends of her own, we invited a few of ours to mark the occasion.
The birthday party called for a celebratory drink—nothing too strong for the lunchtime affair—so we went with a classic Bellini: Peach puree with Prosecco, a dry Italian sparkling wine.
And then a second one with a twist.

Bellini Recipe One bottle of chilled Prosecco Fresh or frozen peaches Fresh or frozen strawberries Sugar If using fresh peaches, peel and pit them. If frozen, thaw overnight in the refrigerator. Blend peaches and strawberries separately to a smooth puree, adding sugar and a bit of water if necessary. Spoon 2 tbsp. peach or strawberry puree into a flute glass (or go crazy and add a bit of both), then add Prosecco. Stir to combine. |
With fresh peaches and strawberries in season (and on special at the
market), this is not only a great summer drink to serve, but it's also perfect
for the budget-conscious. You don't need to spend much money on the Prosecco, and the fruit puree will help you stretch the bottle to fill
more glasses. Go ahead—invite more friends!

This sounds sooo good! And our neighbor has a peach tree. I'm making the puree ahead of time -- added a little lemon juice so the peaches don't turn brown. Works with apples, right?
